I · Story
Welcome to La Colina, an Argentinean table in central Amsterdam. We cook the way Argentina has always cooked: meat over open flame, in a room that smells of glowing embers and oak. No shortcuts.
Our grill masters are craftsmen. Every cut is dry-aged and meets the fire at an hour our grandparents would recognise. The wine list is rooted in Mendoza: Malbec, Torrontés, Cabernet Sauvignon and Chardonnay, alongside house wines by the glass.
Argentinean cooking the way it’s done in Buenos Aires. No shortcuts on time, no shortcuts on technique.
The fire is stoked an hour before the first cut. Heat, then meat, in that order.
Argentinean cooking, dressed up for an evening worth remembering.
A good cut of meat asks for two things: fire, and craft. Both come from the parrilla.
